Combine the fresh, eucalyptus-like flavor of cardamom with the musky, floral aroma of rose to make the sweet, delicate and luxuriously delicious rose syrup needed to make this Sparkling Cardamom Rose Mocktail.
Add to a glass full of ice, brighten with a squeeze of lemon or lime then finish with soda water and enjoy!

Ingredients
- Cardamom Rose Syrup: This recipe makes about 1 1/2 cups worth. Store whatever you don’t use in an airtight container and keep in the fridge for a month or freeze for longer. You can make it with regular white sugar or natural sweetener like honey or maple syrup. Check out the post for full recipe & tips.
- Sparkling Water or Club Soda: Use whichever you like.
- Lemon Juice: Just a squeeze of fresh lemon juice (or lime juice) helps to brighten everything.
- Ice: If you really want to get fancy, make your own rose petal ice cubes to serve with the drink.
- Garnishes (optional): Spruce up your drink with fresh lemon or cucumber slices, mint leaves or fruit.
Add Color
Hibiscus (to enhance color – optional): If you really want to punch up the color vibrancy, add hibiscus. You can use hibiscus tea bags or loose leaf. Hibiscus is tart and tangy. I personally think its flavor works well with rose & cardamom, but you might not agree.

Cardamom Rose Mocktail
Fresh, fruity, delicate and floral - make the cardamom rose syrup then combine with sparkling water and pour over ice.
Ingredients
Cardamom Rose Syrup
- 20 cardamom pods or about 1 1/2 tsp
- 1 cup water (240ml)
- 1/4 cup rose petals, ensure food grade/edible petals
- 1/2 cup honey (170g)
- 1 tbsp lemon juice (15ml)
- 1 tsp dried hibiscus (optional)
Mocktail
- crushed ice
- 2 tbsp simple syrup
- 1 cup soda water (240 ml)
- 1 tbsp lemon juice or lime juice (15ml)
Instructions
Syrup
- Gently bash the cardamom pods in a mortar and pestle to open up. Place in a medium sauce pan over a medium heat. Toast 2-3 minutes until fragrant.
- Add water, rose petals and hibiscus to the pot. Simmer, uncovered over a medium-low heat for 15 minutes.
- Turn off the heat. Stir in the honey, lemon juice and vanilla extract. Cover and leave on the heat (burner turned off) at for at least an hour. The longer you let everything steep, the stronger the flavor.
- Place a fine mesh sieve over a small bowl or jar then pour the syrup through to sieve to stain out the cardamom and flower pieces.
- Transfer to an airtight container or jar and keep stored in the fridge until ready to use up to 1 month.
Mocktail
- Add ice to your chosen glass.
- Add 2 tablespoons of the rose syrup and 1 tablespoon fresh lemon or lime juice. Fill to the top with soda water (about 1 cup, but this will depend on how big your glass is).
- Garnish with fresh fruit or lemon slices if you like and enjoy.
Notes
- Simple Syrup Yield: about 1 1/2 cups or 300 grams.
- Substitute Honey: Swap honey for pure maple syrup to make this vegan. You can also use 3/4 cup regular white sugar if you prefer.
- Make it Vegan/ Low FODMAP: Use maple syrup or white sugar in place of honey.
