Huzzah! Another single serve recipe to save me from myself.

Not to mention super satisfying and SO delicious!
These waffles are great on mornings when you want something a little extra without too much extra work. The batter comes together in minutes and cooks in just as much time.
If you find yourself making these around the holidays you can also swap out the cinnamon for a more festive spice i.e. gingerbread, apple pie, pumpkin spice, etc.

Coconut Flour Paleo Waffles (Single Serve)
Single serve Paleo Waffles made with coconut flour - ready in about five minutes! Gluten Free + Dairy Free + Paleo
Ingredients
- 1 whole egg (or two egg whites)
- 2 tablespoons | 14 grams coconut flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 3 tablespoons | 45 ml dairy free milk (like almond, coconut etc)
Instructions
- Mix everything together in a small bowl until no lumps remain. The end batter should be thick but easy to spread.
- Divide the batter between two plates on a waffle iron and cook according to your waffle iron instructions.
- Top with your favourite waffle toppings and enjoy!
Notes
Makes 2 waffles about 3-4 inches in diameter.

I followed recipe to a T and they were very dry Almist disintegration feeling 🙁 any tips ?

Hi Emily! Sorry to hear that! Coconut flour has a reputation for feeling pretty dry so it can be tricky to work with. It sounds like you might have needed more moisture for your waffles but it’s hard to say for sure without having seen the batter before /after if cooked. If you plan on making them again I recommend adding more moisture before you cook. Another egg white or another tablespoon of milk might help the texture

Hi,what a lovely recipe ! Can’t wait to try these out as soon as I get my hands on a waffle iron. I was wondering though, did you mean 14 g of coconut flour – or 2 times 14g?

Thanks Claudia! Hope you like it! So it’s 2 tablespoons coconut flour which is about 14 grams if you weight it out. I like to give measurements in both metric & cup weight since there are a lot of people from different countries who visit

I followed the recipe exactly but these came out really dense, never cooked through, fell apart and never got crisp on the outside. Any ideas on what could have gone wrong?

Hey Natalie! It sounds like it might have something to do with the coconut flour. Did you weigh it or measure with a tablespoon? I’ve noticed for myself in the past that measuring out with cups & spoons can be tricky and doesn’t always come out the same. Sometimes I’ll end up packing in more coconut flour in a cup/spoon which can have a pretty big impact on the final recipe since it’s such an absorbent flour. Hope that helps! Sorry to hear they didn’t work out!

Hi, Sarah! I’ve never thought of using coconut flour to make waffles. I’m always in need of quick breakfast recipes since I’m not a morning person and I often struggle with waking up early enough to have a decent breakfast before going to work. I’ll definitely put this on my list to try :).
