Oats on a gluten free diet can be a bit tricky for some Coeliac’s and dates in energy balls require blenders which means more cleanup and general equipment needed.
With that in mind I wanted to come up with a simple recipe that you can make anywhere, anytime. And here we are: soft, chewy and slightly crunchy paleo + vegan friendly energy balls. Let’s get to it!
How to Make: Paleo Energy Balls
Altogether this recipe can be thrown together in about five minutes with only eight ingredients:
- almond butter
- maple syrup/honey
- almond flour/almond meal
- ground flax seeds
- chia seeds
- vanilla extract
- lemon juice
- dried blueberries
Simply mix everything together except for the blueberries until a soft, slightly sticky dough forms and then stir in the dried berries. The dough might look a little too sticky at first, but should roll together easily when you try. Use a tablespoon to scoop the dough into each portions, roll and that’s it!
Substitutions and Adaptations
- Almond butter can be subbed out for another type of nut or seed butter but keep in mind that it will change the taste slightly depending on what you use. I don’t recommend using nut or seed butter spreads that contain added ingredients – those don’t tend to work as well in the recipe.
- Maple or honey can be used interchangeably here but remember that you need to use maple if you want this to be vegan.
- If you can find/use ground flax seed you can simple add more almond flour.
- Dried blueberries can be swapped out in place of other dried chopped up fruits or even chocolate chips. If you use chocolate instead of dried fruit then leave out the lemon juice.
These are great to keep on hand for a quick snack. Unlike a lot of typical energy balls these are pretty filling thanks to all the nuts/seeds. I don’t usually find myself too satisfied after just one unless it’s got something like nuts, dates or other fibre rich foods.
Keep these stored in the fridge for the next time you’re looking for a quick pick me up in the middle of the day, after the gym or whenever you might need it!
Blueberry Paleo Energy Balls

Ingredients
- 1/2 cup almond butter (or any nut or seed butter of your choice)
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1/2 cup almond flour
- 2 tablespoons ground flax seed
- 1 tablespoon chia seeds
- 3 tablespoons dried blueberries
Instructions
- Combine the nut butter, maple, vanilla and lemon juice to a medium sized mixing bowl.
- Stir in the almond flour, flax and chia seeds until fully mixed. Stir in the dried blueberries.
- Use a tablespoon to scoop out dough and roll into balls and enjoy!

Store these in an airtight container in the fridge for up to a week or in the freezer for up to 3 months.

These are PHENOMENAL! I did sub out the dried blueberries for fresh & put them in the freezer for a few minutes to chill before eating. They will be hitting my breakfast menu often!
