Enjoy this with burgers, tacos, fresh veggies – pretty much anything! The next time you need a sauce or a dip to make your food pop and your mouth happy try whipping up this chipotle aioli and see for yourself.
You can use a store bought mayo or try your hand at making it from scratch – it’s probably easier than you think! I even have a recipe for an aquafaba vegan mayo (soy & nut free) if you need an egg free option.
Just a few tips/questions on Chipotle Mayo before you go:
What do I use if I don’t have chipotle paste?
- a chipotle style hot sauce
- chipotle powder
- if chipotle powder also isn’t available you can use a blend of 1 teaspoon smoked paprika + one teaspoon cayenne powder
- 1 chipotle from a jar of chipotle peppers in adobo sauce – you’ll need to mix everything together in a blender if you go this route.
- You could also try making your own if you felt so inclined
What’s the difference between garlic mayo and aioli?
Aioli basically translates to ‘garlic oil’. It’s very similar to mayo in that it’s an emulsified sauce made with and oil (an egg yolks), but with the addition of garlic.
I suppose you could say that this chipotle mayo might better be described as a chipotle aioli, though a more authentic aioli would probably include the garlic emulsified in from the start.

Chipotle Mayo

Ingredients
- 1 cup mayonnaise
- 1 tablespoon lime juice
- 2 teaspoons chipotle paste
- 1 teaspoon minced garlic
- 1/2 teaspoon chilli powder
- 1/4 teaspoon salt (or to taste)
Instructions
- Add all the ingredients to a small bowl and mix to combine.
Notes
- Store this in an airtight container in the fridge for up to a week.
- Make this with a vegan mayo for an egg free options.
Substitutes
Chipotle paste works best here but if you don't have any paste on hand you can try one of the following substitutes:
- a chipotle style hot sauce
- chipotle powder

This recipe is amazing. We did not have Chipotle powder so we substituted with paprika and caynne as suggested. Had to had an extra half teaspoon of each spice but it turned out delicious. You wouldn’t even know the sauce did not have Chipotle. Thank you

Hi I bought a jar of smokey chipoltte sauce and it is much thicker than any of the sauces that are homemade. Should I thin this out with something?

Hi Dorthy! I wouldn’t worry about thinning it out the chipotle sauce to begin with. If the mayo ends up feeling too thick you can always thin it out with a little oil
