The Filling
Altogether the cherry filling is fairly simple and fuss free. The hardest part will be pitting and prepping the cherries. Working one-by-one can get a little tedious. That being said, you can use frozen, pitted cherries instead. Using pre-pitted cherries will speed up the process entirely. Once your prep is complete, it’s just a matter of mixing and simmering until done.
How to Pit Cherries without a Cherry Pitter
Remove the stem. Place a straw or chopstick where the stem used to be. Push through the cherry to the other side, forcing out the pit.
The Crumble Topping
Instead of using oats, this crumble gets in texture from a combination of chopped or flaked almond and the shredded coconut. Add in the almond flour, sugar, cinnamon and melted butter and mix it all up. The end result is a super tasty cookie-crumble topping to scatter over the cherry filling. Then all you need to do is bake, wait and enjoy!

Ingredients
Filling
- 4 1/2 cups | 1.5 lb sweet cherries
- 1/2 cup | 120 ml water
- 2 tablespoons | 30 ml lemon juice
- 1/3 cup maple syrup (105 g) or honey (113 g) 0R 2/3 cup white granulated sugar (134 g)
- 1/4 cup | 30 g cornstarch
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- pinch of salt
Topping
- 1 1/4 cups | 120 grams almond flour or almond meal
- 1/2 cup | 71 grams roughly chopped almonds OR 3/4 cup | 69 grams flaked almonds
- 1/4 cup | 24 grams unsweetened desiccated coconut (can sub with gluten free oats)
- 1/3 cup | 73 grams brown sugar or coconut sugar
- 1 teaspoon ground cinnamon
- 1/4 cup | 56 grams melted butter (can sub with non dairy butter or coconut oil)
Instructions
- Preheat the oven to 350°F/180°C. Lightly grease a 9 inch pie dish. Set aside.
Filling
- Add all of the filling ingredients to a medium sauce pan. Mix together.
- Bring the mixture to a boil, then reduce the temperature to main a simmer. Let simmer 10-15 minutes, stirring every so often until glossy thickened. Carefully taste and add more sweetener as you see fit.
- Pour the cherry filling into the greased pie dish.
Topping
- While the filling is cooking on the stove top prep the topping. In a large mixing bowl combine: almond flour, chopped or flaked almonds, coconut, and sugar. Mix together.
- Add the melted butter or oil and mix until a crumbly, sandy mixture forms.
- Sprinkle the crumb topping over the cherry filling. Spread the filling evenly over the top and sides of the fruit.
- Bake for about 20 minutes until the topping is browning slightly. The fruit underneath will be bubbling slightly. Let stand for 10 minutes to cool before serving.
