Whipped honey & thyme ricotta with fig toast on gluten free bread
Apparently I’ve been living under a rock for some time now, but I’m pretty sure this summer was the first time I ever tried figs. Maybe it’s because I was a much pickier eater when I was younger, or maybe because they weren’t something you’d find in the regular ol’ supermarket, but for whatever reason they just weren’t something I had. Now that summer is moving its way out and the seasonal fruit and vegetables are changing, now is the time to take in as many figs as I can until they’re gone for the year.
So why don’t we sit down with a fresh slice of  toast topped with honey & thyme ricotta and slices of figs. As far as recipes go this one is probably as easy as they get. Just pop a slice of bread in the toaster as you normally would and as its toasting mix together the honey and thyme with the ricotta and slice up a few figs. In the future I’d like to make this again, but make a baguette out my French Bread and serve it as an appetizer.
Breakfast just got a whole lot tastier…and fancier.
Honey & Thyme Ricotta with Figs on Toast
Whipped honey & thyme ricotta with fig toast on gluten free bread
Ingredients
- 4 slices gluten free bread
- 1/2 cup ricotta
- 1 tablespoon honey
- 1 teaspoon thyme
- 4 fresh figs
- sprinkle of sea salt
Instructions
- Toast your bread as you normally do. While your bread is toasting, mix together the ricotta, honey, and thyme in a small bowl and cut your figs into thin slices. Once the bread is done, spread the ricotta over each slice and top with figs and sprinkle of sea salt.
